At Mikado, we make all our sauces from scratch right here on the premises. Our sushi is hand-rolled daily using traditional methods, and we cook our hot meals to order to guarantee freshness and quality.

Nori

Our nori is sourced from the cold, mineral-rich waters off Japan, where it’s harvested just once a year and carefully graded for quality. It’s then stored and roasted to preserve its delicate flavour and crisp bite. This premium nori is rare in Australia — used by only a few select makers. When you eat a Mikado hand roll, that’s exactly what you’re tasting.

Sushi Rice Vinegar

Our sushi vinegar is inspired by traditional Japanese recipes, blended in-house daily using a method passed down through generations. It’s light, balanced and brewed to complement our warm, short-grain rice enhancing the sweetness and lifting the flavour of every ingredient it touches.

Soy Sauce

Our house soy is gluten-free, rich in umami and brewed to a traditional Japanese profile. It’s smooth, savoury and pairs perfectly with everything from sashimi to your favourite chicken roll.

IT'S ALL ABOUT THE RICE.

At Mikado, our rice really matters. Our recipe is a closely guarded family secret refined over time, passed down, and prepared with care every single day. We honour the craft with no shortcuts, just patience, precision and pride in every grain. 

1. Freshly Made, Every Day 

Our rice is washed until crystal clear, soaked to the second for even texture, and steamed fresh every morning. It’s then seasoned in a traditional wooden hangiri with our signature, trade-secret vinegar blend and hand-fanned for a glossy, fragrant finish. This is the art of sushi rice – done properly. 

2. Authentic Short Grain, Carefully Sourced 

We use only genuine Japanese-style short grain rice, chosen for its perfect starch balance. It clings just right without ever going gluey so your rolls hold together, yet melt effortlessly in your mouth. 

3. A Taste That’s True to Tradition 

Unlike long grain or sticky glutinous rice, our short grain delivers the soft, slightly sweet cohesion that’s essential to good sushi. It balances the saltiness of soy, the sharpness of wasabi and the delicacy of fresh seafood with perfection.
